Everyone loves to have a good breakfast in the morning, but most of the time we're too lazy to pull out the pans or clean up the runaway flour and egg that somehow made their escape from the mixing bowl. Well, you can leave your woes in bed because this speedy recipe will have you making pancakes in your sleep!
These light and fluffy pancakes will leave your kitchen warm and toasty, the fragrance of toasted coconut wafting through the air, making your tummy grumble at each deep inhale.

Additional coconut flakes are sprinkled on before the final flip, the heat of the pan toasting the coconut as the batter takes its final seconds to firm up.
As you stack them up on your favorite plate, cut up some strawberries or any fruit of your choice and watch as the fragrant steam escapes and ever so slightly warms up the berries, causing it to leak and stain, adding more flavour to your meal.

Coconut Pancakes
you'll need:
1 heaped tablespoon coconut flour
1 heaped tablespoon buckwheat four
1 tablespoon shredded coconut
1/2 tablespoon agave
1 small egg
1/2 cup almond milk * you may need more
small good non - stick pan
1. Whisk the egg, agave and almond milk together in a small bowl and once that is done, add the dry ingredients and give another good whisk till you get a consistency in between crepe and pancake batter.
2. Heat up your pan (please make sure it's non stick. If not, you may want to give it a spray of oil) portion batter and once you see bubbles forming around the sides, sprinkle on more shredded coconut and flip.
3. Serve with your favorite fruits or other toppings and enjoy.
