It's been relatively hectic at uni recently. Having to keep up with my procrastination pile of notes and other uni related things. So as the weekend neared and after having sat my mid year business finance test on Friday, what better way to start off the weekend than doing some good ol' baking?
This weekend I attempted a coconut cake recipe I found whilst scrolling through the Frankie website. It was adapted to suit individuals with celiac disease (aka, the ever popular gluten free fad) but I changed it up a little because, I mean, unless you're really gluten intolerant, eating something gluten free isn't going to be any healthier for you. In fact, I reckon there's more processed junk in gluten free products. Also, you know you're going to find yourself reaching for another snack thinking that you've been oh-so-healthy, but who are we kidding right? Just eat the darn thing!
(everything in moderation, of course)

anyway, I've decided not to post my version of the recipe yet because I want to attempt it again as it didn't really come out as I envisioned (a little photography work goes a long way, seriously). So in saying that, I'll put a link to the original recipe here -->
