My break has definitely been wonderful thus far, baking, reading and re-playing 'blank space' to my heart's content.
Continuing on from the 'celebratory' theme when I baked the banoffee cake, today's post celebrates the invention of the doughnut pan and the great happiness it brings when one's mother purchases it for them (along with this beautiful marble slab that I am so, so grateful for).
I've been seeing many posts on baked doughnuts recently and I really wanted to jump on the bandwagon! I'm so so glad that I did because I think they instantly brightened up my blog with that pretty pastel pink icing and 100's & 1000's just screaming 'party!'.

Burnt butter, poppy seed & orange baked doughnuts
Makes 6 doughnuts
What you'll need:
Doughnuts
1 cup all purpose flour
1/4 cup sugar
1 tbsp poppy seeds
1 egg
25g butter
3/4 tsp baking powder
rind of one orange
1/2 cup buttermilk
2 tbsp orange juice
Icing:
1 cup + 2 tbsp icing sugar
1 tbsp milk
1 tbsp orange juice
food colouring + toppings of choice
1. Pre-heat oven to 180 degrees C. Mix all dry ingredients (including rind) and set aside.
2. Heat the butter in a small saucepan. Heat until the crackling sound dissolves and keep watching as the butter turns into a nutty/almond colour.
3. In a small bowl, whisk buttermilk, orange juice and egg together. Once done, add two tbsp of the burnt butter to the mixture. Pour into the dry ingredients and fold with a metal spoon or spatula.
4. Divide evenly and bake for 12-15 minutes.
5. Once baked, set aside to cool and begin making the icing.
6. Simply mix all the ingredients (aside from the toppings) until you get a smooth icing that remains opaque when drizzled onto the doughnuts.
7. Dip cooled doughnuts into icing mixture and sprinkle with toppings. Let the icing set before attempting to stack or display.
